Being season 3 is supposedly in production, that would mean the cost for canceling season 4 and 5 would be a mere 40 million, compared to the average half-billion to produce a season. Of course there likely would be actor's contracts that may need to be paid out, etc. I also hear rumor that the Dark Wizard Ciarán Hinds is disgruntled with the slow progress of the series. I suppose the problem with taking two plus years to get a season out for five seasons does present a problem of actor retention as they age ten years through the project, and may cut into committing to other projects.
I can't see them canceling the show after season 3 because it has been one of their most watched shows ever, but you never know, especially considering how expensive it has been to make. Cancellation would not bode well for the future of Tolkien adaptations. War of the Rohirrim was not exactly well-received, and expectations are also low for The Hunt for Gollum. The show being canceled could mean no more Tolkien stories on screen for many years to come.
