Once, there was a Dwarf named Bob. Bob was nothing like the other Dwarves around him. All of them were big, hearty fellows who would mine gold and make tools all day while drinking around fires at night, but Bob was exceptionally clumsy, kept burning himself, falling down, bonking himself on the head, and other such things. One day, a big monstrous Dragon attacked the Dwarves' hall. The Dwarves tried to kill it with their axes, but the dragon was too strong for them. Bob, the only one left, tried to swing his axe, but got himself in the foot. The Dragon promptly died from laughing too hard.

Yes, Dwarves are portrayed too "stereotypically," though there were some interesting characters in The Hobbit and Gimli was pretty dynamic. I guess they may simply be underused.
