I also thought the Council of Elrond was very interesting. They added Gandalf speaking in the black tongue. Boromir was near the ring, started reaching for it, then you heard Elrond say 'Boromir!' I believe that was when Gandalf started quoting the lines that were written on the ring. I also thought it was cool the way the had Gandalf mention at one point that Gollum used to be called Smeagol. And the Trolls!!! After Weathertop, right before Sam says, 'Mr Frodo? He's going cold!' Sam leans over Frodo and says something about 'Mr. Bilbo's trolls' and you see them in the background.
