As others have pointed out, Frodo and Sam would have left the fellowship and Merry and Pippin would have most likely been captured. But I think the big change would be what the fellowship did after they discovered Frodo and Sam gone. I'm sure that had Borimir lived, he would have still lusted for the Ring for Gondor and would have wanted to pursue it.
