My favorite is Narn I Hin Hurin. It is the most in-depth story in Unfinished Tales, and the characters are fully developed. There are humans, dwarves and elves, as well as (I believe) an exchange between Morgoth Bauglir and Hurin - most fascinating! And it's a great, well written tragedy.
