Sting Sauron in the 1st movie

at the beginning of the first movie, when sauron dies and 'explodes', all ofhe troops of men and elves are knocked down. are they dead, or just knocked down? if they are dead, it would really be a blow to the human population in middle earth...

Considering Isildur was pretty much at ground zero and seemed no worse for wear, I would say they were just knocked down.
If you're looking for anything more (like from the books) to answer this question it isn't going to be found because nothing of the sort is in the books.
H.C.

Sauron does not die. It would only be some sort of energy release as he leaves his "human" shell.
It may not appear in the book but looks good in the movie.

As HC said, they didn't die. Isildur survived, as did Elrond.

Personally, I thought that moment looked corny in the movie, but then again I've never been able to really picture it happening. Indeed, how does one lose one's bodily form after the removal of one's Ring?

That is alot of 'ones' Elladan and Elrohir!
You could even say,"Indeed, how does one lose one's bodily form after the removal of one's One Ring?"
The removal of the ring kindof fits in with the whole simplified version that Peter Jackson made up (although what use does a floating eyeball have with a ring, I do not know) but Sauron in the books had already lost much of his strength after wrestling with Elendil and Gil-galad. Isildur cutting Sauron's ring when he was already casted down merely robbed Sauron his strength of maintaining a physical body for some time(remember he put much of his native Maia strength into its making, as did Melkor with his creations such as the Dragons.)

Maybe Saruon just farted and all of those people fighting were knocked by the effect of it.
To be honest, I think that exploding scene was not what Tolkien had had in mind. But the scenes afterwards show how Sauron's troops loose control and fall down, as far as I can remember. I guess it's much the same as it's at the end of RotK, when the Ring is destroyed. Sauron doesn't concentrate on his troops anymore, so they falter. I guess that's what PJ wanted to show.
