And it's between 2 people again. Why is it that three-way bandwagons are so rare? Especially since there is usually a range of people to choose from in the beginning.

I think it always starts to snowball once it becomes "clear" that two people are ahead of others. Something to consider for election sociologists/crowd psychologists/whatever. Who probably have lots of existing theories and working models on this.
