I'll go with the first set I've owned. The recent pre-movie Ballantine copies:
The Hobbit is teal and has a picture of Gandalf on his way to Bag End. The Fellowship of the Ring is blue and has a picture of Frodo, Asfaloth, the Nazgul, Merry, Pippin, Sam, Aragorn, and Glorfindel. The Two Towers is red and shows Frodo and Sam as they begin their journey to Mordor after the breaking. onewhitetree was gracious enough to send it to me! The Return of the King is purple and has a picture of the white city.
