I'd suggest just letting the chickens roost in trees during the night. If they free range, the job of catching them at night to put them anywhere (into a makeshift coop or whatever) is going to be difficult, if not impossible...depending on how not hand tame they are.
Do we have any dogs? There should be a couple and if they're of any use at all, they'll at least work to keep watch at night against wild animals. I don't know anything about the pigs and cows. -- Folwren
