Who was the one who after the quest,
was the last of the ringbearers to return to the west?"

The problem with this one being Return, since none of the ring bearers were ever in the west in the first place.

"Who is the one who was born in the shire
and followed the ring into the mountain of fire?"

The problem being Followed the Ring, which is an obvious reference to Gollum. Thought thinking about it, Sam followed Frodo and thus the ring into the mountain of fire, or at least into a cave in the mountain. Are all these riddles supposed to refer to the same person?

"Who is the one who, hidden from view,
Heard what the fellowship first planned to do?"
Sam, without a shadow of a doubt. I think.
