Sting Music

One of the gifts given to men by Eru was that they were not subject to what was played in the music as the elves were, ie they were not subject to fate, but it is seen in the Silmarillion and LOTR that many of the men in the tales seem to be controlled by fate.
My question is, were the early men subject to the music, as in the third theme of the music one of the movements was obviously men, and the gift didn't set in until the ages of the dominion of men, or did the men set their own destiny and it just appeared to be governed by fate.
