The most I've found about the history of necromancy is (somewhat ironically) in an online Catholic Encyclopedia. (here) It seems to define necromancy as communication with the spirits. The are references to zombies (a person lacking free will, not neccessarily dead) in Hatian folklore supposidely created by a cocktail of local herbs and some sort of a ritual.
