Gondorcentric? An interesting word. I think we were not meant to know who all of the peoples of the South were, save the Haradrim, the Easterlings and the general 'swarthy folk' that occupied the lands near and around Nurnen. The knowledge of who all of Sauron's human and orkish slaves were would not add anything to the plot and it lends an aura of mystique to Sauron, enslaving thousands of unheard-of minions.
