That is some good musing there. I can't even keep the names straight yet!
I would change one and add two:
Boromir - I think Boromir is more akin to Tulkas than to Oromë. Tulkas was more of a pure fighter and did most of the 'manhandling' of Melkor himself, rather than just hunting his fell beasts.
Rangers of Arnor and Ithilien - These two groups fit my perception of Oromë. No open or warlike combat, using the stealth of the hunter as their best weapon and best defense. And a love for the land of ME, which was strong in Oromë.
Eorl - He would be also a great reflection of Oromë, not just for his battle cunning, but because of the similarity in transportation! Their horses Nahar and Felaróf were both unique steeds.
You're right, it would be easy to go and on!
