This list was a result of a group effort on the Barrowdowns IRC site one day, after someone suggested Whitewater on the Anduin as a fun idea. I edited the list down somewhat.

The statues faces are the ones that get painted.
I would imagined that the climbers/painters faces would already be red from the exertion of the climb!

Don't forget the competitions introduced by Peter Jackson in the films:

Brandywine Ferry Broad Jump

Collapsing Stair Vaulting.

Moria Pillar Climbing (currently open to Orcs only, but the dwarves are petitioning the M.E.O.C. - Middle-Earth Olympic Committee - to open it up to all races.)

Balrog Free-Fall - (most people can only do this once.)

Coming soon in The Two Towers - Elven Stair Surfing!

Also introduced in the movie:

hide-and-seek against a pack of crows.

Steal the firework-test, where you are up against some of the most vigilant wizards around.

Swimming contest in the Anduin, current champion (and only competitor) is Samwise Gamgee.

Also try to outbest Boromir in the arrow contest, where you have to live with more and more arrows being shot into you. (also a one-time competition)

Later, the maze of the paths of the dead will be introduced, along with running contests in Fangorn against the fastest ents.

Dash to Mount Doom (with orcs out to get you)

apple taget throwing in Bree (Bill Ferny as the target)
