I'm very confused. I'm reading Unfinished Tales and I'm confused about exactly who Amroth's parents are.

So who were Amroth's real parents? And why did Tolkien consider making Galadriel and Celeborn his parents and then seemingly disregarding this?

I think JRRT considered Amroth to be the child of Galadriel and Celeborn after he had written LotR. He then thought about it and decided that it didn't fit in with what he had written in LotR. (This being after he had written that bit in The History of Galadriel and Celeborn)

So he thought up some other history for the guy.

Indeed, the first quote is considered correct. Amroth wed Nimrodel, and when she was lost, he went searching and became lost in the ocean. After his loss, Celeborn and Galadriel ruled Lorien.
