is there any real description of what is beyond harad and to the south?

No one knows....

Seriously, aside from some early maps by Tolkien, there is no reference to what is South of Harad (which means "South", by the way), much as there is no reference to what is East of Rhûn (which means "East", interestingly enough). There's Umbar. Then there's desert. Then, after that, we'll assume there's some temperate area, and then some snowy areas. Maybe some water. Probably a bunch of Men, too.

Here's a link to great site that is dedicated to maps of middle earth. This page deals with the wider lands of ME. However, all these maps are interpretive, and none authoritive.
